BAKED BEANS   Eileen Coffin

1 lb bacon  1 medium chopped onion  1 cup brown sugar                               1 cup water
15 oz can pork ‘n beans                      15 oz can butter beans
15 oz can kidney beans                       15 oz can lima beans
 
Dice bacon and brown. Add onions to the dripping and cook until onion is clear and bacon browned.  Add water and simmer 10 minutes. Add brown sugar, turn off heat and mix will.  Drain beans and add to mixture.  Place in 13’ x 9’ pan and bake uncovered 350 degrees for 1 ¼ hours.

HOT CHOCOLATE MIX February 28, 2012

HOT CHOCOLATE MIX

 
1 box non-fat dry milk (8 quart)
1 2lb box of Nestle Quick
1 8 oz Cremora
1-cup confectioners sugar
 
Mix all ingredients thoroughly. Store in airtight container.
To serve, put ½ cup mix in cup. Add hot water.

HOME MADE APPLE SAUCE

 2 lbs apples

½ to 2/3 cup sugar

½ cup water                         

1 teaspoon lemon juice

½ teaspoon cinnamon                 

/8-teaspoon nutmeg.

 Cook apples until tender.

BARBECUE  SAUCE

 1-cup catsup                                       

 2-tablespoon oil  

2 tablespoon Worcestershire sauce   

2-teaspoon liquid smoke

2-teaspoon salt                        

 8 tablespoons brown sugar

¼ teaspoon thyme                          

2-tablespoon onion flakes

2-teaspoon paprika                        

 2 teaspoon mustard

 Blend all ingredients.  Let sit overnight.  Good with pork or beef.

COCKTAIL SAUCE

 2 cups ketchup                                    

¼ cup fresh horseradish sauce

¼ cup fresh lemon juice                  

Tabasco sauce to taste

 Mix all ingredients and refrigerate.

 HORSERADISH SAUCE

 2 teaspoons fresh horseradish                  

1-teaspoon Dijon mustard

1 teaspoon salt                                    

1 small onion, grated

1 ½ cup mayonnaise                              

1 tablespoon wine vinegar

2 drops Tabasco

 Mix well and refrigerate.

MUSTARD SAUCE

 1 ½ cups mayonnaise                              

½ cup prepared Creole mustard

1-2 tablespoons fresh horseradish           

tablespoons cider vinegar

 Mix well and refrigerate.
